Carrot Nut and Raisin Cupcakes with a delectable Cream Cheese Frosting
This is a fun cupcake that takes after our Carrot Bread but is sweeter and more dessert-like because of the amazing Cream Cheese Frosting piped on top. This too is chockful of sweet carrots and flecked with our famous Corky's walnuts and California raisins. The warm cinnamon spice touched with small batch pure vanilla and a hint of nutmeg bring it over the top.
