12 muffins
This muffin is a nod to the 60s and 70s when muffins were a favorite portable breakfast and when seeds, nuts and whole grains started being all the rage. The famous Morning Glory Muffin is an earthy whole grain muffin filled with sweet apples, raisins and carrots and with added texture from coconut flakes and Corky’s walnuts. It’s a very satisfying breakfast or snack. Spreading cream cheese or jam is not needed but would be completely appropriate!
Ingredients: Organic whole grain flour (whole wheat, spelt), brown sugar, fresh organic carrots, fresh organic apple, local eggs, avocado oil, organic raisins, organic walnuts, orange juice, coconut flakes, vanilla, cinnamon, baking soda, ginger, salt. Topping: roasted sunflower seeds.
