This bread is 50% whole grain flour and 50% artisan wheat flour. The addition of the whole grain flours (spelt, wheat and rye) makes for an incredible tasting bread.
We use no commercial yeast and our dough is 100% naturally leavened with a long fermentation period. This yields a delicious bread that’s also highly digestible.
